Green mountains that plunge into the Bay of Biscay, three provinces (Bizkaia, Gipuzkoa and Álava) and a food culture obsessed with the small plate. San Sebastián has three Michelin three-stars in a city of 180,000 people; Bilbao turned itself around with a titanium museum; and the coast in between hides fishing villages, surf beaches and Txakoli vineyards you can taste at source. This is the guide to five days of pintxo bars, wine cellars, walled towns and Atlantic swims.

Entry 04 · Friday
We drove up the N-634 in the drizzle. In Getaria it cleared. Elkano at 14:00 sharp — whole turbot on the grill, split at the table, the fisherman's blessing. Afterwards up to Txomin Etxaniz for a Txakoli tasting, pouring the wine from a metre above the glass. Home along the coastal road, the Cantabrian silver-grey on our left.
